Step 1: Cook the GEKI noodles according to the package instructions, but slightly undercook them by reducing the boiling time by a minute or two. Drain and set aside.
Step 2: In a large skillet, heat 1 Tbsp of vegetable oil over medium-high heat. Add the sliced chicken and cook through until it starts to brown. Remove the chicken from the skillet and set aside.
Step 3: In the same skillet, add another Tbsp of vegetable oil if needed. Stir-fry the mixed vegetables, minced garlic, and grated ginger until the vegetables are tender-crisp.
Step 4: While stir-frying the vegetables, combine the soy sauce, oyster sauce, Sriracha sauce and sesame oil in a small bowl. Mix well to create the sauce.
Step 5: Add the cooked GEKI noodles and pre-cooked chicken breast back to the skillet with the vegetables.
Step 6: Pour the prepared sauce over the noodles and chicken, tossing everything together until well combined and heated through.
Step 7: Serve GEKI Fiery Hot Chicken Stir-Fry in bowls and garnish with chopped green onions, enjoy!
