Heat butter in a large pot over medium heat. Add yellow onion and cook until translucent, 2 to 3 minutes. Increase heat to medium-high, and continue cooking, stirring occasionally, until onions are deeply caramelized. If the bottom of the pan becomes dark, periodically deglaze with a tablespoon or two of water.
Add garlic and stir.
Add water, seasoning packet and thyme sprig. Increase heat to high and bring to a boil.
Add ramen noodles and cook for 3 minutes or until noodles reach preferred doneness. Portion noodles and onions into the individual oven-safe bowl. Ladle in broth until barely covered.
Top each bowl with shredded cheese. Transfer pan to oven. Brown under broiler until bubbly, about 2 to 3 minutes.
Finish with green onion and croutons.
