Pumpkin Top Ramen®
- 2 packages of Top Ramen® Chicken
- 2 cups shiitake mushrooms, sliced
- 2 cloves garlic, minced
- 1 onion, sliced
- 3 tsp ginger, minced
- 3 cups water
- 1 tsp salt
- 3/4 cup pumpkin purée
- 1/4 cup cilantro, to garnish
- 2 tsp Sriracha
- 15 oz light coconut milk
- 1 tbsp oil
- 10 oz cooked chicken, cut into strips
Heat oil in a pan over medium heat. Add garlic, onion and ginger. Cook for 5 minutes. Add mushrooms and cook for an additional 3 minutes.
Add water, coconut milk and seasoning packets and stir. Then add pumpkin purée, Sriracha, chicken and salt. Simmer for 5 minutes.
Add noodles and cook for 3 minutes.
Divide soup into bowls and garnish with cilantro. Enjoy!
